Chef Thomas Blanchard Joins IICA as Corporate Advisor & Chef FacultyA big step for IICA, A Giant Leap for Culinary Arts

On 20th June 2017, IICA, New Delhi achieved on of its' most prestigious milestones. Chef Thomas Blanchard who has over 20 years of experience including that in Europe & India joined hands with IICA, New Delhi to develope and implement the hgihest quality of culinary education for the students of IICA, New Delhi. 

Chef Thomas who is orginally from France, started his career with Chef Allan Ducasse ( A french master chef); and since then, Chef Thomas has never looked back. He arrrived in india in 2011 and joined one of Delhis' most prominent Bakery & Patisserie shop - L'Opera as an Executive Pastry Chef, and later headed Dabon and represented Elle & Vire, yet another very prestigious milk products co. 

"It is indeed a matter of great pride & privlege to have with us such a senior chef from France who will help us impart the most authentic recipes and techniques to our pastry and culinary students." said Arjun S Datta (COO, IICA). 

The institute will be commencing its newest batch of programs on 18th July 2017, where Chef Thomas and the entire team of IICA will welcome the students. This will be the institutes 12th year in culinary education.

IICA Celebrates 10years of Culinary Education

Friday 22nd August 2016, A date no IICA Faculty or Student will never forget.The institute celebrated its 10th year anniversary and also the joining of its' newest batch of students for the July 2016 Sessions.The event was hosted at the ITC Sheraton by Mr. Virender S Datta (Founder & Chairman, IICA); and attended by all the current students and faculty.The chief guest for the event was Chef Manisha Bhasin (Sr. Executive Chef, ITC Maurya), and to accompany her other dignitories included Mr. Ajay Bakaya (Executive Director, Sarovar Hotels), Mrs. Binita Sharma (General Manager, ITC Sheraton) & Mrs. Yuvika Gogia (Training Manager).The institute also celebrated the highest number of student intake in 10 years with over 75 students enrolled in one batch (July) and in addition to that the institute facilitated the current students with awards of excellence for outstanding performance.

IICA Students Win AAHAR 2016Culinary Excellence at its' best

This regional round consisted of several participants who were selected from numerous entries in a pool of talented bakers across the country. These contestants participated in an exciting mystery box challenge and two winners have been chosen to move ahead for the semi-finale and weeklong cake decorating training with awarded Chef Peachy Juban in New Delhi. Master Chef Anthony Boyd, Le Cordon Bleu, London takes a special session with IICA StudentsIICA Students get a chance to learn from faculty Le Cordon Bleu, London.

New Delhi, February 23, 2015:  It is certainly every aspiring culinary students desire to learn from the best chefs from across the globe, and IICA students received one such exclusive opportunity to be a part of a training session organized by Le Cordon Bleu, London in New Delhi.   Chef Anthony Boyd, who is the Cuisine Master Chef at Le Cordon Bleu in London was invited to New Delhi by the Cordon Bleu counterpart in New Delhi for an awareness building and knowledge sharing workshop of culinary skills by its’ senior faculty member. The training session was organized over two days (23rd and 24th of February 2015) and students from International Institute of Culinary Arts, New Delhi were invited to attend this one of a kind training session by Chef Anthony Boyd Chef Anthony has 20 years of experience in the hospitality industry having worked in London at renowned restaurants such as Chez Bruce. After progressing through the kitchen brigade, Chef Anthony moved to The Square in London’s West End in 1997, working as part of a team that earned the restaurant two Michelin stars. In 1999, Chef Anthony gained the position of Head Chef at The Glasshouse in Richmond, with responsibility for managing and training a brigade of ten chefs. The Glasshouse earned a Michelin star in 2002 with Chef Anthony in command of the kitchen. After 11 successful years, during which time he cooked for the Belgian ambassador to the EU, Chef Anthony moved to the Michelin starred La Trompette in 2010, with control over a kitchen brigade of 14 chefs. Chef Anthony’s culinary knowledge and expertise was called upon by the Young Chef of the Year Competition, who invited him to judge the award between 2004 and 2008. Chef Anthony joined Le Cordon Bleu’s team of Cuisine Teaching Chefs in 2013. The first day of the demonstration included a demonstration by Chef Anthony who demonstrated some very intricate butchery skills and classical recipes such as Roast Leg of Lamb, which the students enjoyed thoroughly. The second day of the demonstration was a patisserie demonstration where students learnt various pastry techniques offered by Chef Anthony Boyd. Both the demonstrations were highly enlightening and all the faculty & students of IICA thoroughly enjoyed being a part of the event. The event was concluded by each IICA Student receiving a signed certificate by Chef Anthony Boyd from le Cordon Bleu; also Chef Anthony Boyd was presented with a Hall Fame Plaque by Mr. Virender S Datta(Founder & Chairman, IICA).

Celebrating food from global cuisine. 

The Gourmet High Street Event, was celebrated

as an occasion for food and wine lovers.

The event included profusion of activities

Including sampling of recipes, culinary classes conducted by celebrity chefs.

Needless to say, IICA would never miss such an opportunity & to be a part of the 3 daylong events and got an opportunity to work

with the best of chef’s from the industry. The culinary institute that has always supported such great initiatives was a part of the main event as kitchen support partners and sent its’ finest students to work with all the celebrity chefs at the event.

There were 3 main sections of the event which included: The Culinary Grind (Master Classes by Celebrity Chefs), The Sipping Turf (Wine & Spirit Workshops) & the Exhibition; where all the top leading manufacturer & restaurants setup stalls for visitors.
The league of extraordinary chefs with whom the IICA students worked with  included Vikas Khanna, Kunal Kapoor, Ranveer Brar, Sara Todd - contestant Master Chef Australia, Chef Saransh Goila, Chef Nishant Choubey, Chef Anahita Dhondia, Chef Kishi Arora, Chef Manish Mehrortra,

The Event

The event proved to be a great blatform where the food lovers met their favorite chefs, sampled global recipes and it was quite an educational and interactive event for the people of Delhi-NCR. For many exhibitors showcasing their products from different regions of the world, it was an excellent opportunity to meet their potentional buyers directly and create a brand-awareness. 

Master Chef Vikas Khanna also launched his latest book “World Feasts” at the event, which was very well appreciated by all the attendees as well.
“This country loves food. There could be nothing better than being on a common platform with celebrity chefs and bring global flavors together in celebration of food” said Chef Vikas Khanna. 

The Organizers;Mr. Pawan & Mrs. Kavneet Sahni who lead the initiative recieved an extreemely good response by one and all, it is said that the young & dynamic duo will return to Gurgaon next year and give all the food lovers of the Millenium City more reasons to celebrate good food & wine.

IICA Team makes Worlds Largest CakeWorld Toilet Day

19th November 2014, New DelhiThe IICA team of chefs & students amazed the audience yet again, by producing a world record in a span of 2 days. This time last year, the team of passionate chefs created a 250kg cake on the occassion of World Toilet Day. This year, our team of chefs were given the task to break the current world record for the largest cake in the shape of a toilet.With no surprise, the record was created at 700kgs of Sponge, Chocolate, Fruit and Cream..!! On September 09th 2014, IICA organized a Wine appreciation class for its gastronomy students by the biggest supplier of Indian wines SULA. The class was conducted by Sula sommelier Mr. Mukesh, Assistant Manager, Sula Wines.

It was a fun, interactive and informative way to start off the week .The Tasting session with expert comments from the Expert Mr. Mukesh of Sula Wines made it all the more worthwhile.


The study of wine has recently become more popular with people showing interest in wine has increased considerably. Wine culture is finding its takers, especially among the youth. "The availability has also improved because more vineyards in India are producing wines.


Not surprisingly wine tasting clubs and institutes in the city are on a high which makes it all the more important for chefs to understand wine making ,the  science & its appreciation .Students often find themselves in dilemma between Red or White as they slowly discover the concept of fine dining and wining.


This session certainly clarified all their doubts and queries on how , what , why and which wine for the purpose suited .


The session included the history of Sula wines,

the process by which different wines are prepared.

The technique that enhances their flavors,

Different types of wines were focused upon.

The session also included the tasting

Techniques by which a wine can be accurately


Interpreted and understood.


The structure of a wine is directly related to where

Of food we eat with it. Many of the interactions of

Wine and food are genuinely surprising but all will be

Useful in both personal and professional life.

Attention was also paid to optimum storage conditions,

How to identify a faulted wine and 'read' a wine label

And how to serve wine at its best.


The session focused on the many elements that influence

The health and quality of the wine. What makes a wine?

Unique? The origin, climate, weather, site, altitude, aspect,

Soil, and vine; all play their part.


The method of fermentation, temperature control, size of cask, type of oak, whether to fine and filter, what closure to use – cork, screw cap or glass.




Seeing the explosion of interest in wine our students were definitely high on the knowledge and health benefits they got to learn from the session.


“We got to taste 3 kinds of different wine and the amount of knowledge the session has provided us with is incredible and appreciated”, said Adnan Ariff, student, IICA.


Students of IICA look forward to be a part of many such sessions.


The event was hosted keeping in mind the young students who are not eligible to drink and are below 25 years of age. Only students 25 years and above were allowed to taste.

International Institute of Culinary Arts,New Delhi,celebrated Executive Chef Pablo Morales's visit.Chef conducted live demonstration where he showcased his expertise and knowledge.The Chef also demonstrated some important techniques, which proved beneficial to the students. He along with Chef Emilo shared their culinary experiences on how to make various scrumptious desserts. 

It was a great opportunity for our students to witness such an eminent personality from the industry to aspire them become great professional chefs.

Chef Pablo Morales Melendrez is from Spain and has completed his studies as Pastry Technician from Gremio Pastry School. He passed his high school from Salvador de Madariaga School.He has also undergone various Bakery courses as a part of his complimentary studies.He started his career in September 2007 as an apprentice at BUBO, Carles Mampel, and Barcelona, Spain. He took up his first job with FICULS Classic Pastry Boutique in February 2009. From January 2010 to July 2010, he worked as Pastry Chef at Banquets & Groups. Hotel ME. In August 2010, he moved to I LOVE FOOD project and consultant for ABHAR Company (Pastry & Catering), Kuwait as Sous Chef of Pastry. In March 2011, he further moved to Hotel Sheraton Park Tower Luxury Collection and One O One restaurant (5th best restaurant in Great Britain 2011) London, UK where he worked as Pastry Chef till November 2012. Before joining The Leela, Gurgaon as a Executive Pastry Chef he was working at HARRODS. London, UK as Pastry Chef.



The event was commenced by an Introduction about Chef Pablo accompanied by Chef Emilo,Which was carried out by all the esteemed guests;Chef Pablo, Chef Emilo, Mr. Virender S Datta& Mr. Arjun S Datta (COO, IICA).This was followed by a brief introduction and update of the International Institute of Culinary where Mr. Arjun S Datta,Highlighted the institutes award winning legacy and also showcasing some of its’ most recent achievements including earning its’ distinct recognition of being India’s first culinary institute to be accredited by the World Association of Chefs Societies (WACS).

The event was then followed by a 3 hour demonstration and the students learnt desserts such as a 4 Chocolate Texture followed by Summer Tiramisu and much more with fine tricks of his trade which made our students really happy.

New Delhi-26th August 2014- It was a matter of great pride and honor when Mr.Vikrant Batra (leading restaurateurand entrepreneur),visited the International Institute Of Culinary Arts,New Delhi to deliver a lecture.This was given to the Institute's Culinary students and aspiring entrepreneurs.The key focus of the lecture was leadership skills and latest trends in the Hospitality Industry.Mr.Batra shared his journey from doing an MBA to taking up his family business at Batra Banquets to start his own chain of restaurants. It was definitely a lecture packed with characteristics of a true Entrepreneur like Innovative and creative Ideas, Active and Dynamic Approach, Interest and abilities, Indented outcomes and leadership behavior for our future entrepreneurs.Entrepreneurial is taking nothing and turning it into something, the relentless pursuit of opportunity without regard to the resources controlled” said Mr. Vikrant Batra.

Whirlpool Appoints IICA as Chef & Food Consultants

On 12th May 2014, Arjun S Datta (Chief Operating Officer,IICA) signed an agreement with leading kitchen appliance manufacturer Whirlpool, In this arrangement, International Institute of Culinary Arts, New Delhi has been appointed as a Chef & Food Consultant in Delhi & NCR with the key responsibility to enhance the experience of customers buying Whirlpools new Built-In appliances.

At IICA, it has been a matter of great pride and privlege to share the knowledge and passion of culinary arts. Yet again the opportunity was given the institute to conduct a training program for the top management team of KPMG where the entire team visited the institute for one of kind culinary experience. 

The entire IICA faculty had custom designed a menu consisting of the finest High- Tea food items for everyone to learn and followed by a full spread to taste & enjoy.

Needless to say the event was a great sucess, and we look forward to welcoming the KPMG team to the finest culinary institute in the country.

IICA Student Wins Student Chef of the YearYet another great achievement for IICA

23rd November 2013, a historic mark in the IICA legacy. Megha Agarwal, IICA student who completed her Advance Diploma in Culinary Arts (2 Year Program) from IICA in November 2013 was nominated by the institute to compete for one of the most prestigious recognitions of the year " Student Chef of the Year" at the International Chef Day Awards organized by the Indian Culinary Forum. 


The competiton was between 18 other highly eminent hotel management colleges where IICA student Megha Agarwal secured her 1st position by preparing a 3 course menu before the most respectable jury in the industry. 


Needless to say, IICA & its entire faculty is extreemely proud of Megha and her achievement and congratulates Mr. Virender S Datta (Chairman, IICA) & the faculty who trained Megha in pursuit of her dream. 

'World Toilet Day'- A Tasty Celebration by IICAIICA Faculty & Students make 250 Kg Cake

It was yet another challening and extreemely exciting 2 days in the IICA kitchens, as the team was appointed by the 'Sulabh International Society' to make a whoping 250kg Cake shaped in the form of a toilet, to mark the "World Toilet Day". Needless to say the entire team worked round the clock to meet the deadline of 48 hours to completion where the cake was to be presented at the FICCI auditorium, New Delhi on 19th Novemeber 2013. 

Led by the IICA's very own team of chefs, the students & faculty were determined to make this a true master piece. The final product not only impressed all specatators but also left everyone asking for more..

"Indeed, it is of great honor and pride to be a part of such an important event, I always feel that our passion for food must reflect in all possible avenues" said Mr. Virender S Datta (Founder & Chairman, IICA), who is known to have always been in the forefront of various challenges during his 45 years career in the hospitality industry.

IICA students get selected for Industrial training at WESTIN HOTEL Gurgaon

What an exciting weeks its been at the IICA kitchens, our very own IICA students who are only 2 months into there culinary program have been selected for Industrial Training at the Westin Hotel, Gurgaon & Sohna Road 

A big congratulations to all those who got selected and also a big thank you for both - Westin Hotel & Imperial Hotel New Delhi for selecting our students for this opportunity. 



IICA conducts culinary demonstrations at all IBM Offices

2nd & 3rd September 2013 proved to be a very tasty 'byte' for senior executives at IBM (Dehi & NCR); when a team of 20 students and faculty from IICA conducted over 90 culinary demonstrations at 9 different IBM offices in Delhi & NCR. Whats more; the 'non-food' industry is constantly inclining toward culinary related activities in order to engage there employees and customers. 


This is IICA's 2nd large scale culinary event where MNC's & BPO's like Pepsi, American Express and now IBM have taken the institute on baord to be the exclusive culinary education providers in forms of team engagement, team building and many such similar excercieses.
